Healthy Breakfast


Normally oatmeal is my go-to meal for breakfast because it’s fast, tasty and healthy. But I woke up this morning wanting a change. After a few online searches for recipes that include eggs and avocados, I came across this one on Martha Stewart‘s website.

So, I made it:

And then I thought, this needs more color. So, I added fresh tomatoes (from our home garden):

I ate a banana on the side for good measure and to guarantee I’d stay satisfied until lunch.

Final ingredients: hard-boiled egg whites (two), one avocado, two small tomatoes (I’m not certain what kind they are), approximately a tablespoon of olive oil, seasoning, and a banana on the side!
